However, eating a large amount of fruits can have a negative effect on one's blood sugar. The sugar contained in some fruits can be considerable, and eating them can definitely raise the level of one's blood sugar. For many people this is far from optimal, of course, and so one should seek to eat more of the sorts of fruits that may bring about less of a rise in blood sugar levels than other fruits.

Fortunately for those who would like to eat fruit but would like to minimize the amount of sugar they consume, there are a number of fruits available that are low Glycemic Index fruits. That is to say, eating a certain amount of any of these fruits will raise one's blood sugar level only a certain amount relative to a certain amount of glucose. And, importantly, when these fruits are eaten, one's blood sugar will rise only a certain amount compared to eating other fruits that are higher in sugar content.

So what are some examples of fruits with low GI? One great example is the apple. Apples are excellent fruit and can be found year-round all over the world. They have red skin and white, firm flesh, and can be eaten raw or cooked in a multitude of ways - they can be stewed, for instance, baked in a pie or served with cream, or even served as part of a main dish. The heavy fiber content in apples makes them excellent breakfast, snack time or dessert fruit - fiber can help bring about a full feeling in the stomach in order to fool the stomach into thinking that it is full. Apples have low GI, with a GI value of just 38.

Another good example of a low-GI fruit is the cherry, which has an even lower GI value of only 22. Cherries are a red fruit with sweet, juicy flesh and a large pit in the center, which must be removed prior to cooking and/or eating. As with apples, cherries may be eaten ripe and raw or may also be incorporated into desserts such as cherry cobblers and pies, and can also be part of a main dish as well.

Lastly, many citrus fruits are also excellent low-GI fruits. Oranges have a GI value of 42, grapefruits 25, and lemons (whose GI values are not often given since lemon juice is too sour to be consumed in large undiluted amounts - as a matter of fact, lemon juice, like vinegar, can be used to lessen the overall Glycemic Index value of a certain food item).

Bagels and English Muffins

Skip the bagel store with its large, dense bagels (where just one-quarter of a bagel equals one carb choice) and head to the grocery store. Sandwich Breads

Add to that a healthy dose of fiber and these are bread selections that every body can love.

Lastly, do you love white bread? The lactic acid used to sour "sour dough" also brings down the glycemic index (the rate at which it raises blood sugar). Whereas, a typical glass of orange juice as around 110 calories.

So,what is a drink to stay away from? Well, it's diet soda. New research suggests that these artificially sweetened drinks will mess up your brain's ability to measure caloric intake. So instead of drinking milk, alcohol, or diet soda, why not have some soy milk, tea, or coffee.

Honey Mustard Chicken and Broccoli

Really tasty and easy to make. I usually somehow end up making this for at least three dinners per week. It takes barely any time at all, and it tastes great.

Try this recipe out any time if you are trying to lose weight, or add on muscle. It is high protein and low car.

Ingredients

1 Boneless Skinless Chicken Breast 
1 Cup Broccoli 
3 Tbsp Honey Mustard 
3 Tbsp Low Sodium Soy Sauce 
3 Tbsp White cooking wine 
2 Tbsp Extra Virgin Olive Oil 
Garlic Powder

Heat the oil on medium Heat in a small pan. Add about 1 tbsp garlic powder and let it melt. Add the chicken breast to the oil and sprinkle with more garlic powder. Turn the chicken to brown on each side and cook through. While the chicken is cooking, heat 1 cup broccoli with 2 tsp water in a small pot with medium heat. Mix the mustard, soy, and wine in a separate bowl. When the chicken and broccoli are each finished cooking, combine in the pan and cook in the mustard sauce. cook on low-medium for about 5 minutes or until the sauce starts boiling.

If you don't mind adding some carbs to the mix, either Mix with brown rice or serve the rice on the side.

A Quick and Easy Low Calorie Salad - Tomatoes, Basil & Brown Rice

Tomatoes, basil and brown rice come together in a delicious low calorie salad perfect for a summer lunch or picnic. It's the perfect salad to make during the summer, when tomatoes are at their flavorful best. If you are on the lookout for easy healthy recipes this fits the bill. With just a tablespoon of olive oil for six servings, this is definitely a low calorie recipe. It has just a handful of ingredients so you can make it in minutes, especially if you have leftover brown rice in the refrigerator. If not, just get your rice cooking while you prepare the rest of the ingredients.

It is yummy on its own for a light lunch or the perfect accompaniment to grilled fish or chicken. Since it tastes best served at room temperature it would be a great side dish to take to your next picnic or potluck.

With brown rice in the refrigerator and tomatoes and basil on the counter, I was able to whip up this wholesome brown rice salad in less than ten minutes.

To make this salad a day ahead, leave out the basil until you are ready to serve it, then stir it in at the last minute. (You may need to adjust the seasonings again too.)

If you are like me and find it difficult to cook rice, you may want to do what I did - invest in a rice cooker. It has made my life so much simpler. Sticky and/or scorched rice are now a thing of the past.

Tomatoes, Basil & Brown Rice Recipe 
makes 6 servings

The recipe calls for champagne or rice wine vinegar. Since I had neither I substituted red wine vinegar with good results. I also used honey instead of sugar.

1 cup brown rice 
2 teaspoons kosher salt, divided 
1/4 cup champagne or rice wine vinegar 
2 teaspoons sugar 
1 tablespoon extra virgin olive oil 
Freshly ground black pepper 
1 pound ripe tomatoes, chopped 
1 cup packed basil leaves, chopped

Bring 2 1/4 cups water to a boil and add the rice and 1 teaspoon salt. Return to a boil, cover, and simmer for 30 to 40 minutes, or until the rice is tender and all the water is absorbed. Alternatively, prepare the rice in your rice cooker according to manufacturer directions. Transfer the rice to a large bowl.

In a small bowl, whisk together the vinegar, sugar, olive oil, remaining teaspoon of salt, and a pinch of pepper. Pour dressing mixture over the rice. Add the chopped tomatoes and basil. Mix well and adjust the seasonings to suit your tastes. This salad is best served at room temperature.

However, a senior's diet tends to have more specific needs than just "eat healthy".

A new study was published in Annals of Internal Medicine that found that both low-carb and low-fat diets - together with behavior treatment - will help seniors lose weight, but a low-carb senior diet was found to be the best choice for improving cardiovascular risks.

Around 300 overweight seniors participated in this study; half were given low-carb diets and the other half low-fat along with behavior treatments for two years. Measurements such as weight, blood pressure, bone mineral density, body composition and others were taken every three, six and 12 months. The group participating in the low-carb senior diet doubled their good cholesterol levels from the other group - 23% as opposed to 11% when the study reached its end at two years.

Both groups lost a significant amount of their original weight; about 7% of their body mass, simply from the senior diet choices they made along with the behavior modification, which researchers said were a key component in the weight loss.

"I think an important outcome from a study like this is to think about which diets fit best for which people," said Dr. Gary Foster, the study lead author, director of the Center for Obesity Research and Education at Temple University, Philadelphia. "This study would suggest that perhaps for those with low HDL-cholesterol levels to begin with, that a low-carbohydrate approach to weigh loss may have some advantages."

Orange-Tamari Salmon

This recipe features an exotic blend of citrus and tamari, with all the nutritional benefits of omega-3s!

What You'll Need:

1 1/2 lb salmon fillets (4 equal portions)
1/3 cup dry white wine
2 tbsp low-sodium tamari
1/3 cup freshly squeezed orange juice
3 tbsp ginger (peeled and grated)
1/4 cup chopped scallions
1/2 tsp olive oil (extra virgin)
1 tsp raw honey
Cooking Instructions:

Rinse fillets and pat them dry.

Combine white wine, tamari, orange juice, green onions, honey, and ginger in a bowl and whisk them until they form a well-blended marinade.

Place fillets in a baking pan with the pink flesh facing up. Pour the marinade evenly over all fillets. Cover pan with foil or plastic wrap, and refrigerate for 4-6 hours.

When you're ready to cook, remove fillets from refrigerator while you preheat your broiler.

Remove excess scallions and ginger from the fillets, and brush the scaled side of each fillet with extra virgin olive oil.

Place fillets, skin down, on broiling pan.

Broil fillets on high heat for 10 minutes, or until cooked through. The flesh should be slightly brown on top, and firm, flaky, and light pink throughout.

Spinach-Ricotta Portobellos

This vegetarian treat goes great with whole wheat pasta and a side salad. As an added bonus, each stuffed mushroom cap serves up a healthy dose of calcium and protein!

What You'll Need:

4 large Portobello mushrooms (caps)
1/4 tsp sea salt
1/4 tsp black pepper, divided
1 cup reduced fat ricotta cheese
1 cup fresh spinach leaves, chopped
1/2 cup shredded Parmesan cheese, divided
2 tbsp kalamata olives,diced
1/2 tsp Italian herb seasoning
3/4 cup marinara sauce
Cooking Instructions:

Coat a baking sheet with no-calorie cooking spray and preheat oven to 450 degrees.

Place Portobello caps on baking sheet, gills facing up.

Sprinkle with sea salt and 1/8 tsp black pepper. Cook until tender (about 20 minutes).

While caps are cooking, mix ricotta cheese, spinach leaves, 1/4 cup Parmesan cheese, diced olives, Italian seasoning, and remaining pepper in a bowl.

Pour marinara sauce into a separate bowl and cook or microwave until hot.

Remove caps from oven and drain them. Place them back on the baking sheet and spread 1 tbsp marinara sauce on each.

Heap each cap with 1/3 cup ricotta spinach filling. Sprinkle all caps with remaining Parmesan cheese.

Bake for 10 minutes, and serve with remaining warm marinara sauce.

Sweet & Tangy "Fried" Chicken

This recipe puts a healthy spin on a Southern favorite. It's also packed with selenium, a vitamin that boosts the production of disease-fighting antioxidants.

What You'll Need:

3 tbsp Dijon mustard
2 tbsp grade B maple syrup
2 tbsp peanut oil, divided
1 tbsp fresh thyme, chopped
3/4 tsp black pepper
1/2 tsp salt, optional
4 lb bone-in chicken pieces, skinless and fat-trimmed
1 1/2 cups whole grain breadcrumbs
Cooking Instructions:

In a large bowl, mix Dijon mustard, maple syrup, 1 tbsp peanut oil, thyme, salt and pepper. Whisk until well-blended.

Dip chicken pieces in mixture until evenly coated on all sides.

Cover chicken and place in refrigerator for at least 30 minutes (up to 6 hours).

Preheat oven to 400 degrees. Place a wire rack over a large baking sheet to cook chicken.

Mix breadcrumbs and remaining peanut oil on the surface of a large plate. Dredge the meatier side of each chicken piece through the breadcrumb mixture.

Arrange pieces on wire rack, dredged side up. Bake for 35-40 minutes or until golden brown. Serve hot and enjoy!

Well, it's that time of year again - football season! One of my most favorite times of the year, for sure! It's about a great sport, good friends, and good food.

One of the best things people like to do during a football game is eat some good football fare. Unfortunately, there isn't usually anything healthy at all about football food. Chili dogs, fries, hamburgers, bratwurst, nachos with heavy, calorie-laden dips and oil-fried potato chips, all can lead up to very unhealthy consequences later. But, as with anything else in life, there are alternatives. Good, healthy, nutritious snacks that you can eat during a football game, or any time of the year.

One of the things you can do is put out a fresh vegetable tray. Celery and carrot sticks, grape tomatoes, broccoli and cauliflower, along with a low-fat dressing for dip can make a terrific crunchy snack. Next, look for reduced-fat or organic chips. There are many varieties of less-fattening chips available; try purchasing a few different ones to see what suits your taste. For nachos, you can try the blue corn tortilla chips, one serving (about 18chips) range from 120-150 calories per serving, and the fat count is small-27 to 63! And Velveeta now has a low-fat version of their famous soft cheese that everyone loves to melt in the microwave and dip your favorite chip in.
